I hope you are all having a lovely week! I'm back with another 'What I Ate Wednesday', it is the start of Lent today and I have to say I don't think I will be giving anything up this year. I'm already eating better as part of my New Years resolution and think giving something else up would just make that even harder!
Breakfast: Home-made strawberry frozen yogurt with granola, I have an ice cream machine which I use to make this with natural yogurt, strawberry's and honey.
Lunch: I'm trying to cut down on white bread but I couldn't resist this sandwich, the filling is ham, coleslaw and lettuce.
Dinner: Home-made Quinoa lasagna with spinach and peppers, a healthy alternative to a regular lasagna.
